Koshu Local Tasting Plan – Shindo Fuji

Based on the Buddhist philosophy of Shindo Fuji (the idea that the body and land are inseparable), this plan celebrates Yamanashi’s terroir by showcasing the region’s best flavors.

Shindofuji is a concept rooted in Buddhist teachings, expressing the idea that “the body and the land are inseparable.” It reflects the belief that our bodies are deeply connected to the land we live on. In modern food culture, this philosophy emphasizes the importance of incorporating local ingredients into our diet and embracing a lifestyle grounded in the region. Here at the foot of Mt. Fuji, this principle is embodied in the phrase Shindofuji, encouraging guests to experience a way of living in harmony with nature and local traditions.

The highlight is the Red and White Wine Hotpot, prepared with Yamanashi’s red and white wines. Indulge in luxurious ingredients such as Fujizakura pork, duck, and alfonsino simmered in a fragrant broth.

Another star dish is the salmon and trout roe chirashi sushi, as beautiful as it is delicious.

・Oshinogi: salmon and trout roe chirashi sushi
・Grilled dish: wagyu beef grilled on magnolia leaf
・Hotpot: Red and White Wine Hotpot
